Small estate in the heart of the Bandol appellation, on gentle south-facing slopes 5 km from the sea.

The small surface area of ​​the estate allows for tailor-made cultivation, reasoned and respectful of the environment: mechanical weeding, manual harvesting in small crates, in several passages if necessary to ensure the perfect maturity of the grapes...

Concerning olive oil, we have chosen to let nature decide the fate of our olives: no treatment whatsoever, no insecticide, no fungal, no herbicide… We only give them a little water when the drought requires it. The harvest is manual, and the olives are immediately taken to the mill to be pressed.
As a result, each year brings us its surprises, but abundant or rare, our oil is totally natural!

The oil from our olive trees is very fruity, intense, fiery: it develops rather green, peppery, even spicy notes, as well as a slight bitterness.
Its very present taste works wonders raw as a light drizzle on salads or fish with a dash of lemon.

A place on the roof of the underground cellar was reserved for saffron.
Small production, certainly, but how miraculous! As with olives, our decision was not to apply any treatment.
The work is entirely manual: weeding, picking, removing pistils, etc.
Saffron is obtained from a crocus with a reverse cycle: its "spring" is at the end of October, at the same time as the mushrooms, then it begins to wither in May to disappear completely during our summer!
The picking takes place in November: every night, the field is covered with mauve flowers with intoxicating scents which must be picked up early in the morning, so that the fragile pistils are not damaged by the rain or the rays of the sun... or are not eaten by the slugs which feast on it!
